Our first Cooking by Hand workshop for November, inspired by the Paul Bertolli cookbook that has inspired Gracie’s restaurant, our setting for these workshops, and consequently its staff.

Join Brennan Johnson for a one-day, hands-on workshop on sourdough bread making. We’ll be covering all the fundamentals of natural leavening, from sourdough starters to flour choice to baking in the home oven. 

We’ll be using the Gracie’s APizza and Starter Bread space to mix, shape, and bake dough together. Because the sourdough bread process takes longer than our allotted class time, we’ll be mixing a dough from scratch and working with some doughs that Brennan has already made in advance. One batch will be divided and shaped by the group, so everyone has a chance to practice shaping, and another batch will be baked, so that every step of the process is covered. 

Participants will get to take home a loaf of baked bread and a small container of sourdough starter, as well as a recipe to be able to replicate the dough at home.

Capacity: 12 students. Minimum: 6 students. If we do not reach 6 sign ups by a week before the workshop, we will cancel it and send out full refunds to those who signed up. We will send out an email during the week leading up to the workshop either way, as a reminder about the class or, if necessary, to cancel it.

Brennan Johnson

Brennan’s fascination with food culture and history was catalyzed by a trip to Western Europe in 2009 to study communal brick ovens. He began baking bread soon after, baking out of his father’s own brick oven and selling at local farmers markets during his high school summers. He has a degree from Whitman College in Environmental Humanities — which, for him, meant exploring our culture’s relationship to food — an herbalism certificate from Terra Sylva School of Botanical Medicine, and has worked in restaurants and bakeries across the U.S., Japan, and Europe. Gentle Rhythms is a way to piece together those disparate experiences, combining his curiosity in food studies with his love of hands-on cooking. These days, he lives in Portland, Oregon, but is usually found on the road learning about foodways wherever he is.

TICKET POLICY

Payments for classes taught by Gentle Rhythms are non-refundable due to costs incurred by the initiation of purchase. These workshops are small & intimate, and we plan, prep, and buy supplies for the workshop based off of the original registration. If you find yourself unable to attend, you may transfer the ticket to someone else – we will happily welcome your guest but please let us know so that we can update our guest list. However, we are unable to refund fees or provide discounts as all payments are final.

Classes provided by these instructors are hands-on and participation is at your own risk.

RESCHEDULED CLASSES

No discounts will be provided for rescheduled courses due to the initiation of the incurred costs of the workshop. We may provide discounts that are applicable to instructors' offerings (purchasing of product, virtual classes, private event, etc.) due to rescheduling.

By continuing with the registration process, I acknowledge and understand all the risks involved with my participation in a Gentle Rhythms class, workshop or event and assume full responsibility for all risks, including, but not limited to, risk bodily injury, or property damage, arising out of, related to or connected with my participation in said event. I release, hold harmless, indemnify and agree not to sue involved parties, and its officers, directors, members, employees, agents, volunteers, contractors, and all other persons acting by, through or in concert with any of them, and all other entities or persons involved in promoting, setting up, running, and/or administering (collectively, the “Released Parties”) from and against any and all claims, demands, actions, liability, losses, judgments, awards, costs, expenses and attorneys’ fees (collectively, the “Claims”), of any kind or nature whatsoever, by whomsoever raised or asserted. I relinquish and grant to Gentle Rhythms all rights, titles and interest that I may have in any photos, images, pictures and audio and video recordings taken of me in connection with associated events.
